Thanksgiving Pies

The week before I had made the pastry and shaped them into discs, so I pulled those from the freezer the night before and then set them on the counter that morning to take the chill off. I preheated the oven and started rolling out the two pie crusts. I had come across a recipe for a sweet potato and coconut pie, which sounded good. I made that filling and then I was simply craving a chocolate pecan pie and so I made that one too. Two would be more than enough for the two of us. Those turned out nicely. We served up the pies with a dollop (generous plop) of yogurt cream which gives the creaminess you crave but is not quite so filling.
