Thanksgiving Final Plating

Green Beans: I just sautéed these in my largest pan with a little water and olive oil. (This method of cooking vegetables will also be discussed in the Dinner Book). Seasoned lightly with salt and pepper. I put my husband to work cutting off the tips. That kept him busy for a while and freed up some time for me and by the time he was done with two pounds of green beans he knew the difference between the tip and tail end. Mashed Potatoes: These were pretty standard with the exception that I did add some very small dices of white cheddar cheese. I would have preferred to use an orange colored cheddar but once again, the white was all I had on hand. I added the small dices after the mashed potatoes were whipped. Final Plate: everything turned out lovely, and despite my hesitance to cook a big meal for two, I’m glad I did!
