Sweet potato tacos for Taco Tuesday tonight! Sweet potatoes can be tricky to cut. I do thick slices first then crosswise to cube them. I sauté them over medium heat (covered so they don’t burn). Be sure to toss them frequently so they don’t burn. I added onions, peppers, salsa, chile powder, cumin and cilantro. Pretty much any seasoning combo is a winner! Don’t be afraid to experiment.
