Migas!

Migas! I know lots of people that don't care for scrambled eggs but trust me, everyone loves scrambled eggs when they are cooked with corn tortillas. I came across this idea a few months ago when I saw recipes for migas and chilaquiles, essentially soft corn tortillas mixed with a sauce and eggs. Ready to get started? Cut up a corn tortilla into smallish strips or cubes. One larger tortilla pairs well with a two or three egg scramble. Or a smaller one for a single serving. Over a low to medium heat, cook the tortilla pieces gently with a fair amount of oil until they are soft and pliable. Stir often to cook evenly. Have your eggs cracked and beaten with a fork, ready to add. When the strips are soft and tender add your eggs and continue to cook as you would normally do for scrambled eggs. Salt and pepper and finish with some cheese and green onion, if you like. If you want to top with salsa or a red sauce or a green sauce, please do! There is nothing better and more comforting than starting the day with the taste of chips and salsa in your mouth. In fact, why not have them for dinner as well! What would we do without Mexican foods?
