What to do with leftover rice? Whenever we have rice with dinner, I always cook a little extra so we can enjoy it for breakfast as a cereal. I warm the rice in the microwave and then sprinkle it with a little sugar and a generous amount of cinnamon and a small amount of nutmeg. Sprinkle it with raisins or better yet, golden raisins, dollop it with some slightly warmed sweetened yogurt or milk and you are set. It's like rice pudding for breakfast! It is the best use for leftover rice!
