Chile Rellenos :: Lighter edition

I love Chile Rellenos and when we go out for Mexican I order them 70% of the time. However, a true relleno is deep fried and probably not the healthiest menu choice. Years ago a friend of mine showed me a much healthier way to make rellenos. She was using an omelette maker and simply squirting the bottom with a little oil before beginning. You make the fluffy egg batter, and fill roasted peppers (I usually use poblanos) with jack cheese and let the cooking begin. Even though the meal had several components, it is so easy when everyone gets an assignment and with four grandkids in the kitchen, all at perfect ages, it came together quickly. Ellie, the oldest, was cooking the rellenos in the omelette maker. Josie made the guacamole and added the toppings for the hominy casserole. A quick dressing on the sweet potato and black bean salad and Roger at the grill doing the carne asada. All I had to do was cook some white rice. I love this family!
